RECETTE VENDANGES
RECETTE VENDANGES comes in at the very start of winemaking: on the must, when the
vintage is decided. Ready-to-use blends, fine-tuned with our consulting oenologists, to be added as soon
as the harvest comes in.
Why fine chips — particle size ≥ 2 mm, maximum exchange surface: fast extraction, 5 days to 1 month. This is the form with the lowest cost per hectolitre.
Three profiles
- Blanc Fraîcheur — white wines: preserve tension and fruit.
- Rosé Fraîcheur — rosé wines: colour protection, freshness and liveliness on the
palate, without added tannic structure.
- Thermo Rouge — red wines from thermovinification: structure and round out the fast
extraction.
Dosage — 50 to 80 g/hL for Blanc and Rosé Fraîcheur, 100 to 150 g/hL for Thermo Rouge.
The material — French and American oak (Quercus petraea l., Quercus robur l., Quercus alba), several toasting levels, 36 months open-air seasoning.
Format — fine chips, 10 kg bag.
Other forms for the harvest — the same profiles are available as 7 mm staves and as powder tannins. For a straight tannin addition, outside the RECETTE VENDANGES range: EBX 810 — French oak tannins, structure and protection.
